If you are talking about controlling the font, I think you are out of luck with all but high end devices. Changing colours is fine, but font size and type is preset by most phones in my experience. The phone user will be used to seeing this on all websites, so it's not such a problem.
Blackberry has some flexibility with how font is displayed.
