Now I do realise that a Mobi site has various restrictions due to the screen size of the mobile device over a standard website, but what are the limitations; or should I say best practices, for font type, size and graphic images?

I don't have any specific answers, but http://ready.mobi (http://ready.mobi/) is a pretty good tool to find out how mobile compatible a site is

I just wrote an article for a site, it hasn't been published yet but it may help you. I'll post a link when it "airs."
For graphics, basic size is 176 px width, keep the whole site under 50 kb. It doesn't matter what font you use, the phone will use whatever it wants. <hr> will drop your ready.mobi score if you use more than one so use css instead. Hope that helps.
