Jeremy,
Before I give out my list of suggestions, I'd first ask what are your goals for these sites?
Are you shooting for mass traffic for good potential ad revenue? Or would you rather gravitate towards sites that will eventually pay a higher CTR on fewer visitors? Do you have any plans for affiliate programs? Do you plan on offering services or products vs an information only site? Basically, I'm asking how much effort and or revenue do you expect to put into these sites to start? This, IMHO, will give us a better shot at answering your question.
Here are my 10 suggestions, in no particular order:
fantasybaseball.mobi
collect.mobi
virginislands.mobi
alumni.mobi
bridalregistry.mobi/weddingregistry.mobi
cookbook.mobi
crosswordpuzzles.mobi
homeowners.mobi
insurancerates.mobi
restaurantes.mobi
They all seem to have a lot of potential for interesting mobile use...

Good names there. I'm a geo kind of guy so I would definately go with virginislands and antigua. I also like fantasybaseball--if you could integrate a stats package and let people set up teams/leagues it could be huge. All of the ticket-related names are nice as well. I assume the goal would be for people to be able to buy tickets on the site--would that entail negotiating with each nfl, nba and mlb team? That might prove to be a challenge but maybe there's another way. My last 2 choices are crosswordpuzzles and backgammon. Might be a tough to see those on some of the smaller screens, but they should work on most others. Good luck!!

Here’s 12:
Borrow.mobi
Not so much as in locating banks but primarily pawn shops and those slimeball “payday” loan locations throughout the states. Very popular and countless seen in every town and seems like one on just about every many intersection in larger towns and cities.
virginislands.mobi
antigua.mobi
No brainer geo and mega tourist and cruise destinations. With more and more phone companies offering bundled services and now some even offering international plans, I see the future of cell phones becoming a virtual "tour guide" in your hands.
backgammon.mobi
crosswordpuzzles.mobi
Games, games, games…gotta have games on the phones. Kids (and adults) need the daily distractions. The only downside to this would be time it takes to complete a puzzle or play a game draining the battery juice. So perhaps consider these as a fall back or last alternative.
*****.mobi
Okay, you can either go with the obvious gay/homosexual theme or start a site for very ***** (aka, odd) attractions, sites, and what not where folks upload pics of some of the queerest things they have ever seen. Could be a very humorous site and quite popular as it is a word that has a very unique sound when spoken and unmistakebly "odd".
vet.mobi
vets.mobi
Another no-brainer as pets in the states and I am sure most places globally is a multibillion dollar industry and many peeps are just fanatical and will do anything for their pets. Thus, my avatar, my latest “mobile” to haul the herd of 5, and the fact that I have registered numerous pet domains (aVet, 4K9, aDog, Purrs, GotLab(s), Birdies, Chicky, Chickadee, and countless others) not to mention the NC license plate K9Z.MOBI.
Another possibility? The military veteran population. Make one animal, make the other a resource site for Vets to get assistance.
vehicles.mobi
On the go locating service for car rentals, service, and repairs. Not sure how many people will actually shop for vehicles on the tele, but you sure see a hell of a lot of them broken down on the side of the road.
restaurantes.mobi
fiesta.mobi
doctores.mobi
Restaurantes may be difficult for many to spell, but looking at these three are just screaming to be developed. Geo, geo, geo! Such global appeal and a far reaching market for each of these. Perhaps the gems of the bunch as they are very commonly used generic terms in many, many languages and countries.
These I view as being very applicable to being on the go, in need of information while on the go, and being accessed easily and frequently by mobile devices.
The ticket names are nice, but they are long, and heavy competition. If you have one name and then could bundle all of those into one site with links to all your other sites, then that is perhaps the best route to take them. Otherwise, each is a seasonal activity and has a "use by" date, in a sense. The majority of the ones I have selected are not subject to seasonal or dated shelf life. Plus they are a very niche market. Most of the ones I did not choose would be best searched on a PC. Although bondage is another possibility and I agree that it could be a very freaky fetish site. As well as a locator for all that black rubber or leather suits, and whips and chains and handcuffs, etc.
But, of course...you knew that.
